The dish shoowa
The very time-consuming dish "shoowa" consists basically of goat meat served with rice, salad and limes.
By far the most time-consuming dish from the Omani kitchen is shoowa.
A lamb is strongly spiced, wrapped in banana leaves and laid in an earth oven over charcoal.
Cooking time varies according to the size of the animal and can be between 20 hours and 3 days. This elaborate dish is a favourite at Eid festivals.
It is served on a big tray with a lot of rice; in addition there are salad and limes. Afterwards a copious amount of fruit is reached around and finally the obligatory coffee.
